Mamta Singh

My name is Mamta Singh, I am a stay at home mom to two beautiful girls, 4 year old Serophina and 1 year old Saioa. They keep me on my toes and between the two of them, there is never a dull moment in our house. I am originally from Dallas, Texas but have lived in amazing places such as Alaska, Hawaii and now Coastal North Carolina. My husband and I have been together for 12 years and thought we lived pretty adventurous lives until we became parents! I consider myself a foodie, always open to new and different culinary experiences. If I could live at a Starbucks, I would. I am a terrible procrastinator but deep down I’m a meticulous organizer. I enjoy my job as CEO of my household but before that I was a Corporate Educator for Blue Cross Blue Shield Hawaii. I was very fortunate to have the option of staying at home with my daughters and now receive my paycheck in the form of hugs & kisses! Some other things I love: travel, reading, live music, planning parties and spending quality time with friends and family! Like other moms, I do my best to provide a healthy, stimulating and loving environment for my kids and I look forward to sharing my experiences with you!

My Little Cuddle Bug

Timothy is the youngest of my three children. There are seven years between him and Bethany and two years between Bethany and Zach. I look at my older two and I’m amazed at how fast they have grown. I know it won’t be long before Timothy leaves behind the toddler stage.

Helping Out In The Kitchen

Sometimes when I’m in the kitchen, Timothy will come in and out. Sometimes he wants to show me things and sometimes he just wants to see what I am doing and every once in a while he will bump into me because he is not watching where he is going. Even though this is cute it can be frustrating when I’m in a hurry to get supper going.

It’s A Miracle! She Ate A Black Bean Burger!

Black beans are nutritious and delicious!

Hallelujah! The heavens rejoiced along with me and Kevin, on that special night that Saioa ate an entire half of a black bean burger. Bun and everything! It was such a joyous occasion that I had to write a blog about it.

Night after night, dinner after dinner, my sweet child refuses everything. I refuse to make her a special dinner of chicken nuggets every night when the rest of us eat a real dinner that I cooked. Back to the North Pole you go!

My family and I thoroughly enjoyed every bit of this holiday season. You can tell because by the end of it, my house was a disaster. That last week in December really did me in with all the remnants of wrapping paper, gift boxes, new toys and so much other STUFF. Somewhere along the way the laundry piled up to ungodly highs and all I could think about was getting my house back to clean and organized for the New Year.

Cooking With Kids

They were my Christmas cookies!

Serophina loves to help us with things, especially when we are cooking in the kitchen. She is always curious about what we’re making and wants to help stir, pour, mix, etc. Unfortunately for her, my time in the kitchen is sacred. I am like a well oiled machine…… I work fast and systematically and do not prefer interruptions. For this reason, I have little patience to allow Serophina to “help” me cook and therefore don’t let her very often.

Kids And Christmas

Do you ever notice how curious kids can be when it comes to opening up gifts? They can hardly wait until they can discover what is inside that package with their name on it. Sometimes I think we parents are just as excited to see the expression on our children’s faces. We secretly hope that they will be elated. It is especially fun to watch little kids. They get excited just trying to figure out how to unwrap the present.
