Mamta Singh

My name is Mamta Singh, I am a stay at home mom to two beautiful girls, 4 year old Serophina and 1 year old Saioa. They keep me on my toes and between the two of them, there is never a dull moment in our house. I am originally from Dallas, Texas but have lived in amazing places such as Alaska, Hawaii and now Coastal North Carolina. My husband and I have been together for 12 years and thought we lived pretty adventurous lives until we became parents! I consider myself a foodie, always open to new and different culinary experiences. If I could live at a Starbucks, I would. I am a terrible procrastinator but deep down I’m a meticulous organizer. I enjoy my job as CEO of my household but before that I was a Corporate Educator for Blue Cross Blue Shield Hawaii. I was very fortunate to have the option of staying at home with my daughters and now receive my paycheck in the form of hugs & kisses! Some other things I love: travel, reading, live music, planning parties and spending quality time with friends and family! Like other moms, I do my best to provide a healthy, stimulating and loving environment for my kids and I look forward to sharing my experiences with you!

Not A Fan Of Brussels Sprouts (Anyone Else Share That Sentiment?)

Good old green veggies — still super healthy and necessary, yet still the bane of Isaac’s existence.  I continue to offer him all sorts of the good stuff, and eat it myself in front of him, but to no avail.  The closest thing I have gotten to a victory would be him eating half a snap pea pod dipped in dressing and several freeze dried peas…pretty pathetic (:

I for one love vegetables, especially the green kind because I know their many benefits, whereas I guess my toddler is not that interested in the different vitamins and minerals and maintaining a healthy weight like his mother.

Adventures In Baby Food

At our last doctor’s appointment for Ben, our pediatrician told us to go ahead and start Ben on baby food. He’s at the very low end of normal on the height and weight scale – still normal, but apparently he’s small for his age. Incredibly though, the kid just would not stop eating. He would eat 8oz of formula every two hours, if not more often. So Dr. Max decided that it would be a good idea to start him on rice cereal and gradually work our way up to other foods.

The Toothless Wonder

It’s been well established that Joshua likes to eat.  And I mean really, really likes to eat.  I don’t think he’s yet to meet a food he didn’t like.  This doesn’t mean that everything is his favorite food, but he will eat just about everything.

The problem with this, though, is that Joshua remains the Toothless Wonder.  Yes, Joshua is now over eleven months old, and no, he doesn’t have a single tooth yet.  There are not even bumps indicating that teeth are coming soon. Saioa’s New Aversion To All Things Healthy

Why? Why must the palates of babies change so often? So often and SO dramatically. Saioa is one year old now and she has gone through so many food stages it’s not even funny. The best stage was when food was first introduced to her and she gobbled up anything that I put before her.

She’s happy, just not hungry…

Maeve has a tooth!  It broke the skin a couple weeks ago and is slowly making its way out.  I think its mate, the other bottom-front tooth, is right under the skin and will soon make a debut appearance as well. It’s about that time in Maeve’s life when she begins to eat more baby food.  When I say more, I mean more types of food and larger quantities, too, yet she remains relatively uninterested in any food at all. Our nickname for Saioa is lunchbox. She will eat anything you put in front of her and she demands that you give her whatever you are eating as well. She’s made it clear that she will not tolerate baby food anymore. As soon as she sees me opening the jar she starts turning her head and fussing. I don’t think I’ve necessarily spoiled her, but she’s had a taste of real food and now that’s all she wants.
